mysql - create new database on xampp -

How do I create a new database on centos 5 on xmpp? When I say in the hot mysql -u root -p terminal there is no mysql command found. When I go to the phpMyAdimn page it does not accept my user name / password, what to do in this situation to create a new database? XMPP's MySQL service is running because when I run "ps ax | grep mysql", then I can see the XMPP mysql process.
